This wholesome, homemade brown bread is packed with nutrients and a hearty flavor. It’s perfect for sandwiches, toast, or as a side to soups and salads.


Ingredients:

  • Whole wheat flour — 2 cups
  • Oat flour — 1/2 cup (blend oats to make flour if needed)
  • Warm water — 1 cup
  • Active dry yeast — 2 tsp
  • Honey or maple syrup — 2 tbsp
  • Olive oil — 2 tbsp
  • Salt — 1/2 tsp
  • Ground flaxseed — 2 tbsp
  • Sunflower seeds or pumpkin seeds — 2 tbsp (optional, for topping)

Instructions:

  1. Activate the yeast:
    In a small bowl, mix the warm water, honey (or maple syrup), and yeast. Let it sit for 5–10 minutes until it becomes frothy.

  2. Combine dry ingredients:
    In a large mixing bowl, combine whole wheat flour, oat flour, ground flaxseed, and salt. Stir well.

  3. Mix the dough:
    Add the activated yeast mixture and olive oil to the dry ingredients. Mix until a sticky dough forms.

  4. Knead the dough:
    Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic. If the dough is too sticky, add a bit more whole wheat flour.

  5. First rise:
    Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1–1.5 hours or until it doubles in size.

  6. Shape and second rise:
    Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan or on a baking sheet. Cover and let it rise for another 30–40 minutes.

  7. Prepare for baking:
    Preheat the oven to 180°C (350°F). If desired, sprinkle sunflower or pumpkin seeds on top of the loaf and gently press them into the dough.

  8. Bake the bread:
    Bake for 30–35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

  9. Cool and enjoy:
    Allow the bread to cool completely on a wire rack before slicing.

  • Store the bread in an airtight container at room temperature for up to 3 days, or freeze slices for later use.
  • For a sweeter version, add 1/4 cup of raisins or dried cranberries to the dough.
