A unique recipe for gluten-free pancakes that require no flour, yet turn out incredibly flavorful and fluffy. This recipe uses just a few ingredients to create the perfect gluten-free pancakes.
Flourless Pancakes (Gluten-Free).
Ingredients:
- 2 large eggs
- 2 ripe bananas (preferably slightly overripe)
- 1 tsp vanilla extract
- 1/2 tsp baking powder (optional, for fluffiness)
- 1/2 tsp ground cinnamon (optional, for flavour)
- A pinch of salt
- 1-2 tbsp milk (or plant-based milk, for a slightly thinner batter)
- Oil for frying (coconut oil or any vegetable oil)
Instructions:
- Prepare the Ingredients: In a small bowl, crack the eggs and whisk them well.
- Banana Puree: Peel the bananas and mash them with a fork until smooth. For the best results, use very ripe bananas — they add natural sweetness and moisture to the pancakes.
- Mix the Ingredients: Add the mashed bananas to the eggs, then stir in the vanilla extract, cinnamon (if using), and baking powder (if using). Mix well until smooth and combined.
- Adjust Consistency: Depending on the ripeness of your bananas and your preference, add 1-2 tablespoons of milk to make the batter slightly more liquid but not too runny. This will help the pancakes spread easily on the pan.
- Cooking: Heat a non-stick frying pan or skillet over medium heat and add a little oil (for the first pancake). Spoon 2-3 tablespoons of batter for each pancake. Fry for 1-2 minutes on each side, until golden brown.
- Serving: Serve the pancakes hot, topped with fresh berries, nuts, honey, or syrup — whatever you like.
These pancakes are soft, slightly moist, and naturally sweet with a wonderful banana flavour. The baking powder gives them lightness and fluffiness, while the cinnamon adds a lovely warmth.
Enjoy these for breakfast or as a healthy dessert!
