Vegan Olivier without meat and sausage – how to make this salad delicious and healthy

I perfect my version of healthy olivier every year and I want to share with you my latest results of my experiments, which turned out to be very successful.
This is a really healthy olivier that will only benefit your body as it contains protein, lots of probiotics and no fat. No “detox” will be needed after this salad.

And what is especially pleasant – it tastes just as good as the classic versions.
What is important when preparing a healthy salad olivier:

  1. Homemade fat-free protein mayonnaise with probiotics. I completely changed the composition of homemade mayonnaise and almost 100% gave up fats in its preparation . I used to make homemade mayonnaise based on olive pomace oil, but still it is fatty. The mayonnaise I make the salad with now is as follows: silken tofu (vegan protein, sold on ozone), yogurt with probiotics (I used to buy cashew yogurt from YES, but now I had to make my own homemade vegan yogurt), mustard, apple unfiltered vinegar, a little bit of cold-pressed olive oil and spices.
  2. Homemade seitan with probiotics. Instead of industrial sausage (even vegan), I use my favorite homemade seitan. It differs fundamentally from store-bought seitan, because in addition to gluten, it always contains almond flour, or silken tofu, or chickpea flour (depending on the recipe). I also always use miso paste (natural probiotics) when preparing it, which makes it easier to digest and gives it a completely different flavor.
  3. Baked vegetables without oil using the papillote technique instead of boiled vegetables. I experimented a lot with the vegetables (carrots and potatoes). Boiling the vegetables gives too much water in the salad, so I rejected it immediately. After that I tried just baking vegetables in a mold with a little oil. But it still turned out a bit greasy. And this year I decided to use the technology of baking vegetables in a bag “papillote”, which I have already written about. It turned out absolutely perfect! Below I give a link to a description of this technique.
  4. Pickles. Just to make a quick note here – I love only homemade pickles from my mom’s recipe. In my opinion, they are the most delicious. I recommend not using commercial pickles. So, here is the recipe in more detail.

How to make vegan olivier without meat or sausage

Ingredients:

  • 300 g homemade seitan
  • 1 carrot
  • 1 potato
  • 1 can of peas
  • 1 white onion
  • 2 large pickles

For the mayonnaise:

  • 200 g silken tofu
  • 2 tablespoons Dijon mustard
  • 3 tablespoons of olive oil
  • 5 tablespoons of neutral yogurt (I made homemade oatmeal yogurt this time)
  • 1.5 tablespoons of apple cider vinegar (preferably unfiltered)
  • Salt, black pepper

1. Put the carrots and potatoes in a baking dish. We peel carrots and potatoes, cut into large pieces and put them to bake for 40-50 minutes (until soft) at 180C in “bags” papillote.

To do this, we take squares of foil and parchment, wrap the vegetables in them and put them in the oven.

Finely chop all the ingredients. It is the fine chopping that is very important for this salad. Making the mayonnaise. Mix all the ingredients in a blender. In a bowl, mix all the ingredients. Dress the salad with mayonnaise. Let stand in the refrigerator for about 8 hours. And serve! BON APPETIT!
