This refreshing tropical treat combines the natural sweetness of papaya with a burst of citrus and creamy textures. Perfect for breakfast, a healthy snack, or even a light dessert!

Ingredients (Serves 2):

  • Ripe papaya — 1 medium (halved, seeds removed)
  • Greek yogurt (or coconut yogurt for a dairy-free option) — 1 cup
  • Orange juice — 1/4 cup (freshly squeezed is best)
  • Honey or agave syrup — 1 tbsp (optional, for extra sweetness)
  • Granola — 1/2 cup
  • Fresh mint leaves — a few sprigs
  • Lime zest — 1 tsp (for garnish)

Instructions:

  1. Prepare the papaya:
Slice the papaya in half lengthwise and scoop out the seeds with a spoon. If desired, peel the skin, but you can leave it on for easier handling and presentation.

  2. Make the yogurt blend:
In a small bowl, mix the Greek yogurt with orange juice and honey or agave syrup. Stir until smooth and creamy.

  3. Assemble the dish:

    • Place each papaya half on a plate or serving dish.
    • Fill the hollow center of each papaya with the yogurt mixture.
    • Sprinkle granola over the yogurt for crunch.
  4. Garnish:
Top with fresh mint leaves and a pinch of lime zest for a refreshing kick.

  5. Serve:
Serve immediately with a spoon and enjoy this tropical delight!

Tips:

  • For added flavor, include sliced fruits like kiwi, berries, or banana on top.
  • To make it extra indulgent, drizzle with a bit of melted dark chocolate.
  • If papaya is unavailable, try substituting with cantaloupe or another sweet melon.

Enjoy your Papaya Sunrise—a vibrant, tropical escape in every bite! 😊
