Ingredients:

  • Almond flour — 2 cups
  • Coconut flour — 1/4 cup
  • Psyllium husk powder — 2 tbsp

  • Eggs — 4 large
  • Greek yogurt (or sour cream) — 1/2 cup
  • Olive oil — 2 tbsp
  • Apple cider vinegar — 1 tsp
  • Warm water — 1/4 cup
  • Sesame seeds, sunflower seeds, or flaxseeds — for topping (optional)

Instructions:

  1. Preheat the oven:
    Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper or grease it lightly with oil.

  2. Mix the dry ingredients:
    In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, baking soda, and salt. Stir to ensure everything is evenly distributed.

  3. Whisk the wet ingredients:
    In a separate bowl, whisk together the eggs, Greek yogurt, olive oil, apple cider vinegar, and warm water.

  4. Combine the mixtures:

    Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
