This gluten-free bread is perfect for a wholesome breakfast or a light snack. With a nutty flavor and hearty texture, it’s both nourishing and delicious!

Ingredients:

  • Buckwheat flour — 1 cup
  • Almond flour — 1 cup
  • Rolled oats (gluten-free, if needed) — 1/2 cup
  • Baking powder — 2 tsp
  • Baking soda — 1/2 tsp
  • Salt — 1/2 tsp
  • Ground flaxseed — 2 tbsp
  • Warm water — 6 tbsp (for flaxseed “eggs”)
  • Greek yogurt (or plant-based alternative) — 1 cup
  • Honey or maple syrup — 2 tbsp
  • Apple cider vinegar — 1 tsp
  • Chopped almonds — 1/4 cup (optional, for crunch)
  • Sesame seeds or sunflower seeds — for sprinkling on top

Instructions:

  1. Prepare the flaxseed “eggs”:
    In a small bowl, mix the ground flaxseed with warm water. Let it sit for 5–10 minutes until it thickens.

  2. Preheat the oven:
    Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper or grease it lightly with oil.

  3. Mix the dry ingredients:
    In a large bowl, combine buckwheat flour, almond flour, rolled oats, baking powder, baking soda, and salt. Stir well to ensure even distribution.

  4. Mix the wet ingredients:
    In another bowl, whisk together the flaxseed mixture, Greek yogurt, honey (or maple syrup), and apple cider vinegar.

  5. Combine the mixtures:
    Gradually add the wet ingredients to the dry ingredients. Stir until just combined. If using chopped almonds, fold them into the batter. The dough will be thick.

  6. Shape and bake:
    Transfer the dough to the prepared loaf pan, spreading it evenly. Sprinkle sesame seeds or sunflower seeds on top for added texture.

  7. Bake the bread:
    Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool and serve:
    Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
