Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup sliced zucchini
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Season the chicken breasts with salt and pepper on both sides.
- 3. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 4. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until cooked through.
- 5. Remove the chicken from the skillet and set aside.
- 6. In the same skillet, add another tablespoon of olive oil and sauté the garlic for 1 minute.
- 7. Add the broccoli, bell peppers, zucchini, and mushrooms to the skillet and cook for 5-6 minutes, or until the vegetables are tender.
- 8. Slice the cooked chicken breasts into strips and add them back to the skillet with the vegetables.
- 9. Stir everything together and cook for an additional 2-3 minutes to heat through.
- 10. Serve the white meat and veggie delight hot with your favorite side dish.
