White Meat and Veggie Delight

A delicious and healthy recipe that combines white meat and a variety of vegetables for a satisfying meal.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup sliced zucchini
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • 1. Preheat the oven to 400°F (200°C).
  • 2. Season the chicken breasts with salt and pepper on both sides.
  • 3. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • 4. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until cooked through.
  • 5. Remove the chicken from the skillet and set aside.
  • 6. In the same skillet, add another tablespoon of olive oil and sauté the garlic for 1 minute.
  • 7. Add the broccoli, bell peppers, zucchini, and mushrooms to the skillet and cook for 5-6 minutes, or until the vegetables are tender.
  • 8. Slice the cooked chicken breasts into strips and add them back to the skillet with the vegetables.
  • 9. Stir everything together and cook for an additional 2-3 minutes to heat through.
  • 10. Serve the white meat and veggie delight hot with your favorite side dish.
  • 11. Enjoy!
